Recipes & Random-Ish is a newsletter designed to encourage you to keep finding new ways to put plants on your plate. My name is LA and I’m a plant-based advocate from the Bronx. This is important because where I’m from, whole foods plant-based nutrition is not a term I grew up with. But we here in the borough are slowly but surely making changes to how we shop, cook and eat.
Using food as a weapon against diabetes, heart disease and inflammation is a real thing and it doesn’t have to be complicated. I am absolutely out here in these streets advocating for more plants on the plate. And not just leafy greens. I want us to explore all of it. Including the fruits, grains, nuts and seeds. Come on! You can do it. We got this!
So about that water? We need it! Our bones and muscles need it. Water helps move nutrients and oxygen through our system. We can survive for weeks without food but water? We would only last for a couple of days. Dehydration can be dangerous. Lack of water can make you feel lethargic, can bring on headaches and even cause you to feel dizzy and confused.
I’m writing this as NYC is being smothered in yellow and orange smoke from Canada. The Canadian Wildfires have me reaching for clean masks and looking for lots of water. Like most, I carry my water bottle in my work bag. I also have one on my desk. But sometimes gulping ounce after ounce of water gets boring. That’s why I am excited to share my favorite list of hydrating fruits and vegetables with you.

The Recipe: Rice Bowl with Spicy Tofu and Mango
Had fun making this one. Spicy and Sweet. I used a jerk spice rub from the Spice Theory for the tofu and it made all the difference. Mangos are 83% water. I added in some red cabbage which is 91% water. Make a rice bowl, eat something yummy and eat your water!
The Random: Ice Cream Made from Potatoes?
This is not really a new thing. I have seen recipes for Ube which is ice cream made with purple yams. I actually think I need to try that this summer. I can also imagine making your own ice cream with sweet potatoes is yummy.
If you are skipping dairy for health reasons or if you are advocating for the lives of animals, ice cream made from potatoes could be your next big thing. Hey…you never know!
