The Recipe: Easy Greek Salad
Okayā¦.so I just made this salad like 20 minutes ago. It was so good. The recipe is not even up on the Black Girls Eat website yet so Iām going to share photos and the āhow toā info right here. Why wait? Right? One noteā¦I could have used the purple Kalamata olives but I didnāt have any so I went with the Black olives. I also used mini cucumbers but you can use the regular one if thatās what you have. Still Yummy!
Ingredients
1/2 red onion- diced
3 medium tomatoes-cubed
3 mini-cucumbers-sliced
1/2 cup black olives- whole or sliced
1 teaspoon dried oregano
1/4 cup extra virgin olive oil
2 tbs red wine vinegar
1/2 cup crumbled feta
salt/pepper to taste
Directions
Grab a large bowl. Add cucumbers, tomatoes, olives and red onions. Add oregano, salt, oil and vinegar. Use a large spoon to ensure that all of vegetables are mixed well.
