The Recipe: Easy Kohlrabi with Apple and Kale Salad
Available all year long, Kohlrabi comes in green, white and purple. It actually translates to “cabbage turnip” in German. It’s a perfect ingredient for any kind of slaw. Similar to other veggies, you can eat all of it. Even more interesting is the fact that the stems cook down the same as you would with Kale or Beets.
Happy Black History Month! Happy National Heart Month! Make something good to eat. Try a new fruit, grain or veggies. But most importantly, give yourself grace and do the best you can every day!
