Ahhhh…….it’s 2024 and at Day 11, it feels like things are getting back to normal. We took down the tree, tossed out all of the holiday food and mailed out the last and very late holiday cards. It’s Veganuary and I’m ready for meals that look good and taste even better.

I don’t take myself too seriously here at Black Girls Eat. The brand is just like me: Fun, Engaging and Approachable. When I’m not filming recipes and visiting restaurants, I’m always connecting with people and working on concrete strategies for adding more fruits, grains and vegetables to our plates.
But I am serious about the power of plants. Did you know that in 2017, the World Health Organization attributed 3.9 million deaths to lack of fruit and vegetable consumption? Whoa!

The Recipe: Sheet Pan Oven Roasted Vegetables
Maaan……listen. I tried to roast every single vegetable in the fridge this week. Love that it can all go on one sheet pan and in the oven all at once. Such a wonderful way to put more plants on your plate. I made so much that I have enough for dinner and for lunch at the office.

Did you know that Kraft launched a salad frosting a couple of years ago? The goal was to get kids to want to add salad dressing to their salads so they re-packaged ranch dressing as frosting to get their attention. I missed this whole craziness because it happened right before the pandemic. It’s no longer on the shelves. No one is surprised right? Lol.
